Spinach is a wonderful green-leafy vegetable often recognized as one of the functional foods for its nutritional, antioxidants and anti-cancer constituents. The tender, crispy and dark green leaves make them a favorite for chefs, all around the world. The scientific name is Spinacia oleracea. The fresh green spinach are available after the winter, though they are available all throughout the year. Two types of spinach are cultivated for the edible leaves, the Savoy type or the wrinkled variety and the flat-leaf type with the smooth surfaced leaves.
