Simple Strawberry Parfait
- 2 Tbsp strawberry purée
- 2 cups plain Greek yogurt
- ½ cup granola
- 1 cup chopped strawberries
- a drizzle of honey, optional
- ¼ tsp dark chocolate shavings
Benefits of Simple Strawberry Parfait
Strawberries are a staple of summer. A Vermont tradition is to go berry picking at one of our many local farms. Not only are they juicy and delicious, they are full of good stuff. In addition to antioxidants, strawberries have many other nutrients, vitamins, and minerals that contribute to overall health. These include folate, potassium, manganese, dietary fiber, and magnesium. They are also extremely high in vitamin C! Low in calories, they are sure to satisfy your sweet tooth.
Ingredients

Mix strawberry purée into yogurt until it is fully combined and a pink color.

Fill a mason jar or large glass ¾ of the way with the yogurt.

Add ¼ cup granola into each parfait.

Add ½ cup strawberries on top of the granola.

Add a dollop of yogurt on top of the strawberries.

Drizzle with honey and top with dark chocolate shavings. (optional)

Garnish with a strawberry and mint leaves and enjoy!
