Sage's Smoothie

Ingredients

  • 1 freshly cracked young Thai coconut
  • 1/2 c. papaya
  • 2 tbsp. soaked goji berries
  • 1 tbsp. chia seeds
  • 1/2 c. Parsley
  • 1/2 medium frozen banana
  • 3 dates

Instructions

  1. Soak chia seeds in blender liquid for 10 minutes before blending, so they absorb liquid. (This helps them to hydrate you more effectively)
  2. Place all the ingredients in a blender except the berries and nuts for the topping, and pulse until everything is smooth.
  3. If the smoothie is too thick, add more almond milk, ¼ cup at a time, and pulsing with each addition.
  4. Serve the smoothie in a bowl topped with fresh berries and nuts.
