Plumpkins – Pumpkin and Prune Muffins

  1. Heat oven to 350 degrees.
  2. Mix together pumpkin, plum puree, sugar, oil, vanilla, orange peel and eggs in a large bowl. Mix in the remaining ingredients.
  3. Place paper muffin cups in muffin tins. Fill 2/3 of the way with the batter.  Bake 12-15  minutes or until a toothpick inserted in the center comes out clean.
  4. To make prune puree- blend 1 -⅓ cups prunes with 6 TBSP hot water. Puree until smooth.

  • 1 can ( 15 ounces) pumpkin
  •  ¾ cup + 1 TBSP sugar
  • ⅓ cup canola oil
  • 2/3 cup plum puree *
  • 1 tsp vanilla
  • 1 tsp orange peel
  • 4 eggs
  • 3 cups whole wheat flour
  • ½ cup coarsely chopped walnuts
  • ½ cup dried plum bits
  • 2 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1.5 tsp pumpkin pie spice
