Carrot Ginger Soup
- Heat oil in soup pot over medium high heat. Add onion and sauté until soft, about 4-5 minutes.
- Add curry powder and ginger and sauté about one minute.
- Add carrots and salt and cook, stirring, about 5 minutes.
